Bivouac Coffee was born on the trails, rivers, and ridgelines of Colorado. Their founder, Kyle’s, deep connection to the outdoors—and to the rituals that accompany it—laid the groundwork for a brand rooted in simplicity and experience.
After exploring South America and trekking through the Rockies, Kyle and business partner René envisioned a roastery that would reflect both the adventure and intimacy found in nature. “Bivouac” itself refers to a minimalist campsite, stripped of tents and comforts—just you, the stars, and the moment.
That spirit runs through every part of Bivouac: slowing down, savoring the moment, and brewing coffee that invites you to pause. From its earliest days, the company committed to values that transcend business: sustainability, storytelling, and a deeper connection to people and place.

COFFEE THAT REFLECTS ITS ROOTS
For Bivouac, roasting isn’t just a craft—it’s a responsibility. The company takes pride in forging meaningful sourcing partnerships, selecting coffees that reflect both environmental care and cultural heritage.
The team’s travels through coffee-growing regions in South America weren’t just formative—they were transformative. Witnessing coffee’s impact at origin firsthand inspired Bivouac’s commitment to respectful sourcing and traceability. It also instilled a sense of humility: that the roaster’s job is to honor the work already done by the farmer.
In their Colorado roastery, the team roasts to elevate the bean’s natural qualities—not mask them. Every profile is dialed in to highlight the unique sweetness, acidity, and aroma of each origin. And all of their coffees are roasted with one method in mind: natural processing.
THE POWER OF NATURAL PROCESS
The moment Kyle and René tasted a naturally processed coffee—vibrant, fruity, and complex—it changed everything. That “aha moment” sparked a shift in direction: Bivouac would focus exclusively on naturals.
Naturally processed coffees are dried with the fruit still on the bean, which imparts bold, berry-like flavors and a wine-like body. For Bivouac, this style aligns perfectly with their adventurous ethos. It’s expressive. It’s alive. And it represents a more sustainable and low-impact method of processing coffee.
But naturals come with challenges: they’re sensitive, inconsistent, and demand extra care in roasting. Yet for Bivouac, those difficulties only make the reward richer. Each cup tells a story—not just of the land it came from, but of the philosophy it reflects.

Stepping into Bivouac’s Tasting Room in Colorado feels like coming home—from the trail, from a long week, or from the daily grind. It’s intentional by design. The shop is a space for conversation, community, and connection.
Hospitality isn’t an afterthought—it’s a core pillar of how Bivouac trains its team. “We train our team to focus on people before product—listening, welcoming, and creating an experience that goes beyond the cup,” owner René explains. “Coffee is the medium, but connection is the goal.”

They’ve expanded their mobile coffee program for events, allowing them to bring their brews to events across the mountain west. Wholesale partnerships are also growing, with like-minded retailers and cafés beginning to carry their unique lineup of naturals.
Their giveback programs—1% for the Planet and their own 2% community fund—continue to direct money to causes close to their hearts: outdoor access, mental health, and environmental preservation.
